Soy granules with rice

Ingredients

 

  • 8.8 oz / 250 g soy granules
  • 2 cups / 500 ml vegetable broth
  • 14 oz / 400 g mushrooms (sliced)
  • 14 oz / 400 g cooked rice
  • 1 cup / 250 ml low-fat vegan cream
  • 1 teaspoon paprika powder
  • 2 tablespoons oil
  • 2 tablespoons vegan butter
  • 1 large onion (chopped)
  • 1 cup peas
  • Fresh parsley (chopped)

 

Directions 

 

  1. In a bowl, mix vegetable broth, paprika powder and boiling water.
    Soak the soy granules in this mixture for 10-15 minutes.
  2. Heat oil in a pan and add the soaked soy granules. Season with your preferred seasoning and let it fry until golden brown.
  3. In a separate pan, melt vegan butter over medium heat. Add sliced mushrooms and cook until tender.
  4. Add chopped onions to the mushrooms and cook until translucent.
  5. Stir in the peas and continue cooking for a few minutes.
  6. Pour in the low-fat vegan cream and add fresh parsley. Mix well.
  7. Add the soy granules to the mushroom mixture
