Vegan Pasta Bolognese

Ingredients
- 1 lb / 450 g of your favorite pasta
- 2 carrots
- 1 large onion
- 1 bell pepper, diced
- 1 large garlic clove, minced
- 14 oz / 400 g of vegan minced meat
- 2 tablespoons tomato paste
- 1 can (about 14 oz / 400 g) crushed tomatoes
- Olive oil, salt, and pepper to taste
Directions
- Cook the pasta according to the package instructions.
- In a large pan heat olive oil over medium heat.
- Add the chopped onion and carrots to the pan.
- Stir in the diced bell pepper and minced garlic.
- Add the vegan minced meat to the pan and sauté until it’s browned.
- Pour in the crushed tomatoes and tomato paste. Season the Bolognese sauce with salt and pepper.
- Let the sauce simmer for 15-20 minutes.
- Divide the cooked pasta into meal prep containers and spoon the vegan Bolognese sauce over.
