Pork Stew with Vegetables

Ingredients
- 1.1 lbs pork neck (500 g)
- Oil for frying
- 1 large onion
- 1 large carrot
- 1 small parsley root
- 1 stalk of celery
- 1 bell pepper
- 1.7 cups broth or water (400 ml)
- 1 clove of garlic
- Marjoram, Provençal herbs
- 3 dried plums
- 3 dried mushrooms
- 3 fresh mushrooms
- Spices: sweet, smoked, & hot peppers, bay leaf, allspice, salt, pepper, pork neck seasoning, flour
Directions
- Cut the meat into pieces, season with salt, pepper, pork neck seasoning and cover in flour
- Fry in oil in a pan on all sides
- peel the onion, cut it into pieces, add it to the meat & fry
- Place in a pot, add broth or water and simmer for 5 minutes
- Add chopped vegetables and other ingredients and spices and mix
- Simmer covered over low heat until the meat is soft, aprox 1.5-2hrs
